At CANES, we are on a mission to create the world’s best vegan burger. We may be a vegan fine dining restaurant, but we know that sometimes all you want is a good ol’ burger. And not just any burger – we want to create the best vegan burger the world has ever seen.
So, how do we go about it? First, we gather our team of scientists and chefs who specialize in different areas such as rice and flour, smoking, and fermentation. We put our heads together and come up with a plan.
For our burger, we start with the bun. We know that the bun is just as important as the patty, so we put a lot of thought into it. Our low GI brioche buns are made from local, organic Thai rice and our own special vegan butter made from cacao butter and hazelnuts. Not only is this vegan butter healthy, it’s also the secret to the fluffiness, taste, aroma, and moistness of our brioche buns. In fact, our vegan cacao butter and hazelnut-based vegan butter is better than others on the market in terms of health. Cacao butter and hazelnuts offer a host of benefits compared to the common ingredients used in other vegan butters that can be bad for health. We also use natural yeast cultured in our lab for the best possible results.
Next, we move on to the patty. We use smoked mushroom Split-gill mushrooms tempeh for our patty. We make them from Split-gill mushrooms from Krabi, carefully cut and arranged them in a certain way for the satisfying texture. We use mycelium to bind it together, adding fiber and health benefits. Then, we smoke them with Hickory and local Thai wood for the exceptional aroma – no need for artificial aromas here.
But the fun doesn’t stop there. We also include a poached egg made from edible Thai flowers for the color and taste. People usually think of edible flowers as something only for decoration, but they actually have unique tastes that can really elevate a dish. Our vegan mayonnaise-based sauce is made from fermented apples, or you can opt for our vegan hollandaise sauce made from our vegan egg yolk. Our vegan cheese is made from
fermented rice and legumes, and our vegan caviar is made from algae and fermented sauce from byproducts.
All of these elements come together to create a burger that is not only delicious, but also healthy and sustainable. We may be a little bit crazy in our quest for the perfect vegan burger, but we think it’s worth it.
